HOPPING THE RUBICON

A blend of blond ales aged for up to 21 months in oak wine barrels then dry-hopped with Yakima Chief’s 2018 Veteran’s Blend that includes Cashmere, Centennial, Eukanot, Mosaic and Simcoe hops, evoking aromas of tropical fruits, pine and citrus. Proceeds from this project will go to benefit Team Rubicon, a Veteran-led disaster relief non-profit organization. 6.8% ABV

COASTAL GOSE 2018

Few places embody the wild spirit of the Pacific Northwest like the Oregon Coast. To help protect this venerated landscape, we’ve partnered with the Portland Chapter of the Surfrider Foundation on our Coastal Gose blend. This interpretation of the historic Gose beer features sour wheat ales aged in oak barrels with ground coriander seed and sea salt harvested from Oregon’s coastal waters. By donating a portion of the profits from each bottle sold, we are committed to helping the Portland Surfrider Chapter protect and preserve the world’s oceans, waves and beaches––one beer at a time. 7.3% ABV

CHÊNE DES FOUS 2018

Made in collaboration with our friends at Burial Beer Company in Asheville, NC, Chêne des Fous (shen de-FOO), meaning “Oak of the Fools,” is a blend of sour triple ales aged for up to 18 months in French oak barrels with dried sumac, fresh apricots and toasted American oak chains. Intense oak flavors are met with savory lemon and dried fruit notes from the sumac and a subtle stone fruit aroma. 8.4% ABV

BRUNCH LINE

Brunch lines are as much an institution as brunch itself in Portland, so we made a beer dedicated to the rain-soaked hordes of brunch-goers who patiently stand in line for their weekend fare. Inspired by the mimosa cocktail, Brunch Line features sour wheat and blond ales aged in white wine barrels for up to two years with Willamette Valley-grown Chardonnay grapes, then infused with fresh orange zest. 9.6% ABV

CORAL HORIZON

Coral Horizon is a blend of sour blond ales aged in oak wine barrels for up to 16 months with late infusions of grapefruit zest, hibiscus tea and freshly chopped ginger root. Pouring a brilliant coral-red hue reminiscent of a summer sunset, this small batch blend offers a soft, approachable acidity level with aromas of ruby red grapefruit and a refreshing ginger spice. 8% ABV

THE RAINBOW PROJECT

The Rainbow Project is a blend of sour wheat and blond ales aged in oak wine barrels for up to 18 months with orange, lime and lemon zest as well as whole Northwest-grown strawberries. Offering a colorful combination of fruit varieties, this seasonal draft-only release delivers a brilliant polychromatic spectrum of citrus and berry flavor. 6.7% ABV

FRUITOPIAN NOYAUX

This week’s live barrel is a blend of sour wheat, blond, strong blond and triple ales aged for two years in oak wine and bourbon barrels. The triple ales were aged with crushed noyaux and tangerine peel giving a creamy mouthfeel with marzipan flavor notes and a juicy citrus burst aroma. Lastly, a small portion of our red raspberry blend infused with fresh tangerine peel was added, creating a utopia of fruit flavors. 9% ABV

HONEY GINGER LIME

This easy-drinking Northwest sour ale features a spiced rye base beer aged in oak wine barrels with candied ginger and lime peel followed by a late addition of fresh ginger, lime and wildflower honey. Lightly sour with a kiss of honey sweetness, the Cascade H.G.L. offers the perfect balance between complexity and refreshment. 6.8% ABV

SANG DU CHÊNE 2017

Sang du Chêne, meaning “blood of the oak,” showcases sour blond and triple ales aged in three distinct oak vessels: toasted French and American oak puncheons, Cognac brandy hogsheads and aged wine foudres. Oak influences are the highlight, providing flavors of toasted sugars, vanillin and spice that are complemented by the bright acidity and fruity character of the base beers. The 2017 Sang du Chêne captures the marriage of wood and beer at its finest! 9.7% ABV

BEAN TO BARREL

A collaboration project made with Mikkeller, Bean-to-Barrel Triple features a blend of barrel and foudre aged sour triple ales with toasted Oregon and French oak and a late infusion of cocoa nibs sourced from Bean Geeks Craft Chocolate in Copenhagen. Celebrating Bean Geeks’ “bean-to-bar” chocolate-making methods, Bean-to-Barrel Triple offers aromas of dark chocolate, vanilla and toasted oak sugars combined with the light pear and citrus fruit notes of the sour triple. 9.4% ABV

VLAD THE IMP ALER 2017

Behold the return of Vlad the Imp Aler, one of the most iconic projects in our 20-year history of brewing and blending sour beer. A combination of quad and blond ales aged in bourbon and wine barrels for up to two years with orange peel and coriander, Vlad delivers a fresh acidity and light malt sweetness with notes of bourbon, citrus and spice.

NECTARINE DREAM

Blond and Wheat ales aged in wine barrels for up to 14 months with fresh nectarines and a late infusion of nectarine and peach noyaux 6.8%

CUVEE DU JONGLEUR 2017

Originally released in 2008, Cuvée du Jongleur, or “Blend of the Juggler,” consists of select red, triple and quad sour ales aged in oak barrels for up to three years. Making its first appearance in over a decade, the 2017 project pays homage to the original blend, juggling a variety of base beers that offer clean and complex flavors through the lactic fermentation process that has come to define our Northwest Sour Ales. 9.4% ABV

SANG ROUGE 2015

Sang Rouge is a blend of sour red ales aged in select red wine barrels and oak puncheons for up to 24 months. Highlighting the depth and complexity of our base red ale without the influence of additional fruits or spices, Sang Rouge serves as the foundation of our “Sang” series. This rare project features notes of roasted malts, dried currants, aged red wine and toasted oak. 7.8% ABV

PRIMORDIAL NOIR 2017

Primordial Noir is a blend of imperial red ales aged in bourbon and wine barrels for up to two years with Northwest-grown Bing cherries and spices. A concentrated precursor to our Sang Noir project, Primordial Noir features a more robust bourbon and cherry presence with notes of roast malt, molasses and baking spices. Stay posted for a bottle release of this blend in the coming months! 10.5% ABV

SANG ROYAL 2016

A blend of double red ales aged in oak barrels and foudres for up to 22 months with Pinot Noir grapes from Oregon’s famed Willamette Valley wine region. The most regal in our series of “Sang” projects, Sang Royal captures complex notes of summer berry fruit, plum, oak and spice, with a vibrant acidity and soft tannic structure. 9.4% ABV

BOURBONIC PLAGUE 2016 ANNIVERSARY EDITION

This beer was made to celebrate Cascade Brewing’s 20th anniversary. A blend of sour imperial porters aged in bourbon and wine barrels for up to two years with dates, cinnamon, vanilla and orange peel, this limited blend marks 20 extraordinary years of brewing, blending and sharing beer.

OCEAN VIEWS

Enjoy a first-class ticket to a tropical place––metaphorically speaking. El Dorado, Cascade & Ekuanot hops create this tropical hazy pale with notes of pineapple and citrus. 5.3% ABV / 36 IBU

There is no deception here with this hazy black pale ale. Azacca, Ekuanot, and Cashmere hops provide tropical notes that take you to a warmer climate – mentally 5.3% ABV

PORTDOVA

A double IPA collaboration beer with CRAK Brewery from Pordova, Italy. Citra, Amarillo and Azacca hops were packed into this juicy offering 8.3% ABV / 50 IBU

BREWS OF A FEATHER

This coffee beer is a celebration of two different types of “brew.” The addition of more than a gallon per barrel of Stumptown Coffee Roasters’ Holler Mountain cold brew, organic cacao nibs and vanilla beans is our way of enjoying two of our favorite products. Close your eyes, smell the coffee, lemon peel, and the notes of vanilla, and enjoy this serving as if it was the first of your day! 6.1 % ABV 20 IBU

DIESEL 2018

This Imperial Stout was aged for up to seven months in Heaven Hill bourbon and Pinot barrels, with vanilla beans added during cold conditioning, resulting in a decadent cornucopia of flavors and aromas – including dark chocolate, vanilla and licorice – with bourbon soaked dark fruit and tobacco undertones. 10.5% ABV / 50 IBU

Pie-curious

Pie-curious is a blend of wheat, blond, quad and red ales aged in oak wine barrels and foudres for up to two years with fresh nectarines, peaches and a final infusion of cinnamon. Oregon's Own

Oregon’s Own is a special project featuring 100% Mecca Grade malt from Madras, Oregon as a blond base for souring. The beer was aged in Willamette Valley Pinot Noir barrels. We then added Bing cherries from Mosier, Oregon to a portion of the blend-–a nod to the Mecca Grade’s history of farming and agriculture here in Oregon. 7% ABV

IT'S A GIRL

Cascade Brewing’s Artist-in-Residence Kirsten and Rogue Ales Innovation Brewer Danny came together for the ultimate brewing collaboration: It’s A Girl!
Rebel Rose Connors was born May 14th and we made a beer to celebrate it. This started with a brut pils brewed with Cascade hops. Then blended with 20% of a Cascade blonde aged on grapefruit zest, and finally dry-hopped with Huell Melon hops. The unique blend starts with a refreshing citrus kick, and finishes with some nice mellow fruitiness. 7% ABV

CARDI B BONIC

Bourbonic Plague infused with fresh orange zest and cardamom. 11.1%

Cocoa Rojo

Cocoa Rojo is a blend of sour red ales aged in oak barrels for up to 24 months with pure liquid cocao, dried elderberries and spices. This specialty draft-only project features flavors of dark chocolate, raisins, dried figs and hint of baking spices. 6.6% ABV
