VITIS NOBLE

Vitis Noble, meaning noble vine, features sour wheat & blond ales aged in oak barrels for up to 16 months with Willamette Valley grown chardonnay grapes, one of the most celebrated. 9.1% ABV

CRANBERRY 2016

This NW sour ale is a blend of wheat ales that were aged in oak wine barrels for up to 14 months with cranberries, orange peel and cinnamon. Using cranberries grown along the Oregon coast, the 2016 blend offers brilliant cranberry fruit flavor with soft spice notes that offer refreshment through every season of the year. 6.6% ABV

HOLLER MOUNTAIN TRIPLE

A collaboration project created with our friends at Stumptown Coffee Roasters, Holler Mountain Triple is a blend of Cascade’s foudre-aged triple ale and Stumptown’s Holler Mountain cold brew. Flavors of toasted malt, oak and orange zest from the triple are complemented by a distinct coffee presence that brings notes of hazelnut and citrus fruit to this rare collaborative blend. 8.5% ABV

BRUNCH LINE

Brunch lines are as much an institution as brunch itself in Portland, so we made a beer dedicated to the rain-soaked hordes of brunch-goers who patiently stand in line for their weekend fare. Inspired by the mimosa cocktail, Brunch Line features sour wheat and blond ales aged in white wine barrels for up to two years with Willamette Valley-grown Chardonnay grapes, then infused with fresh orange zest. 9.6% ABV

FRAMBLANC 2017

A blend of sour blond ales aged for up to 14 months in oak wine barrels with more than 3,500 pounds of white raspberries. Fresh flavors of raspberries, green grapes, white peaches and pears earned Framblanc the gold medal at the 2017 Oregon Beer Awards. 8.4% ABV

APRICOT 2017

This Northwest sour ale is a blend of blond ales that were aged in oak wine barrels for up to 14 months with more than 13,000 pounds of fresh apricots from the Pacific Northwest. A flagship project in Cascade Brewing’s sour beer portfolio, Apricot offers flavors of fresh and dried apricot fruit complimented by a tart acidity and lingering notes of apricot preserves. 7.3% ABV

FRUITOPIAN NOYAUX

This week’s live barrel is a blend of sour wheat, blond, strong blond and triple ales aged for two years in oak wine and bourbon barrels. The triple ales were aged with crushed noyaux and tangerine peel giving a creamy mouthfeel with marzipan flavor notes and a juicy citrus burst aroma. Lastly, a small portion of our red raspberry blend infused with fresh tangerine peel was added, creating a utopia of fruit flavors. 9% ABV

HONEY GINGER LIME

This easy-drinking Northwest sour ale features a spiced rye base beer aged in oak wine barrels with candied ginger and lime peel followed by a late addition of fresh ginger, lime and wildflower honey. Lightly sour with a kiss of honey sweetness, the Cascade H.G.L. offers the perfect balance between complexity and refreshment. 6.8% ABV

KRIEK 2017

Red ales aged in red wine barrels for up to 17 months with more than 16,000 pounds of Bing and Sour pie cherries. 7.7% ABV

TROPICAL EMBERS 2018

A blend made in partnership with our friends at Beachwood Blendery, Tropical Embers features sour wheat ale brewed with smoked malt—a tribute to Beachwood’s reputation for renowned BBQ—then aged in oak barrels for up to 18 months with additions of whole pineapple and mango. This limited collaboration project offers a unique combination of wood smoke aroma and tropical fruit flavor. 7.3% ABV

MANHATTAN 2016

Manhattan NW consists of sour quad and blond ales aged in bourbon and wine barrels for up to 24 months with sour pie cherries and apricot noyaux. A tribute to the classic Manhattan cocktail, this unique sour beer interpretation features flavors of bourbon, maraschino cherry and bitter almond with a rich malt backbone. 10.3% ABV

PRIMORDIAL NOIR

Primordial Noir is a blend of imperial red ales aged in bourbon and wine barrels for up to two years with Northwest-grown Bing cherries and spices. A concentrated precursor to our Sang Noir project, Primordial Noir features a more robust bourbon and cherry presence with notes of roast malt, molasses and baking spices. Stay posted for a bottle release of this blend in the coming months! 10.5% ABV

SANG ROYAL 2016

A blend of double red ales aged in oak barrels and foudres for up to 22 months with Pinot Noir grapes from Oregon’s famed Willamette Valley wine region. The most regal in our series of “Sang” projects, Sang Royal captures complex notes of summer berry fruit, plum, oak and spice, with a vibrant acidity and soft tannic structure. 9.4% ABV

BOURBONIC PLAGUE 2016 ANNIVERSARY EDITION

This beer was made to celebrate Cascade Brewing\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\’s 20th anniversary. A blend of sour imperial porters aged in bourbon and wine barrels for up to two years with dates, cinnamon, vanilla and orange peel, this limited blend marks 20 extraordinary years of brewing, blending and sharing beer.

Our Blond Ale is brewed with flavorful German Pilsner malt and Czech Saaz hops resulting in a balanced and approachable craft beer. 19 IBU / 4.9% ABV

Our house India Pale Ale is brewed with English malts and a combination of Columbus, Centennial, Citra, Mosaic, and Idaho-7 hops. A rich golden color, citrusy hops and sensible bitterness welcome and reward every sip. 50 IBU / 6.1% ABV

BREWS OF A FEATHER

This coffee beer is a celebration of two different types of “brew.” The addition of more than a gallon per barrel of Stumptown Coffee Roasters’ Holler Mountain cold brew, organic cacao nibs and vanilla beans is our way of enjoying two of our favorite products. Close your eyes, smell the coffee, lemon peel, and the notes of vanilla, and enjoy this serving as if it was the first of your day! 6.1 % ABV 15 IBU

LEMON BASIL GOSE

Lemon Basil Gose is a blend of gose and sour strong blond ales aged in oak wine barrels with infusions of fresh Meyer lemon zest and basil and a finishing touch of French sea salt. Aromas of sweet and sour candy mingle with flavors of citrus zest and hints of basil, all balanced by the sea salt. 6.3% ABV Tapped 3/19/19 @ 6PM

CHÊNE DES FOUS

Made in collaboration with Burial Beer Company in Ashville, NC, Chêne des Fous (meaning “oak of the fools”) is a blend of sour triple ales aged for up to 18 months in French oak barrels with dried sumac, fresh apricots and toasted oak chains. Intense oak flavors of vanilla, crème brûlée, coconut and spice are met with soft lemon and dried fruit notes from the sumac and a subtle stone fruit aroma.

CRAZY NAVEL 2016

Crazy Navel is a blend of sour wheat and blond ales aged in oak wine barrels for 14 months with fresh orange zest. Using both Cara Cara and Heirloom varietals, Crazy Navel captures the essence of the navel orange balanced with a refreshingly tart and dry base beer. – 7.6% ABV

ET TWO, FRUITUS?

Released on the Ides of March, the date of Julius Caesar’s assassination, Et Two, Fruitus? references Caesar’s last words, “Et tu, Brutus?” This limited blend features a sour bock ale aged with two fruits: black raspberries and orange peel. Pouring a bloody red, Et Two, Fruitus? reminds us to “Beware the Ides of March.” This beer debuted as a Live Barrel on 3/15/2016

KRIEKBLANC

As we enter our 2016 cherry harvest, we decided to pick a beer from our 2014 harvest to showcase a unique cherry varietal. This sour blond has been cellar aged for more than 29 months; 24 of those on Oregon white cherries. Notes of cherry and peach stand out with a finish balanced somewhere between acid and candied malt. 8.5% ABV This was a Live Barrel on 7/12/2016

PÊCHE FUMÉ 2016

In collaboration with Freigeist Bierkultur from Stolberg, Germany, we are pleased to introduce Pêche Fumé, a wild, sour wheat ale brewed with smoked malt then fermented in open-top puncheon barrels with Northwest-grown peaches. Fresh peach aroma is met with a soft smoked flavor and a dry, refreshingly tart finish.

ONE WAY OR ANOTHER - BRUERY TERREUX

Iconic bottles, distinctive flavors and outright admiration for each other. One way or another, we were going to brew a beer with our friends at Cascade Brewing. Together, we developed a new sour tripel recipe that we would brew at our separate facilities with each other – one here in Orange County, CA and the other in Portland, Oregon. The collaborative concept called for treating our creations with the same regional ingredients: Meyer lemons from California and marionberries from Oregon. Both brews would be destined to mature for over a year in oak under our respective roofs. At Bruery Terreux, we utilized a mix of New American Oak puncheons, fresh bourbon barrels, port barrels and oak wine barrels to create the ideal blend of flavors, and we couldn’t be more pleased with the complex, tangy tripel that emerged. Try it side by side with Cascade’s release to see how a single recipe can be interpreted One Way or Another.

PEARPAWSTEROUS - UPLAND BREWING

With similar wheat base beers, we aged our beers on whole paw paws from Indiana and a custom pear blend from Oregon. Malt bill includes 30% Unmalted Wheat, which undergoes starch conversion by boiling during a “turbid mash”. The beer is then aged for long periods in oak barrels. During fermentation, yeast, Brettanomyces, and other souring microorganisms create a tart, dry and refreshing sour ale. Selected foudre beer was transferred and aged on a blend of Indiana paw paws and Oregon pears. Pearpawsterous is straw to pale in color with the perfect balance of pawpaw and pear fruit flavors. With a zesty carbonation, it finishes tart and dry.

GROUND BREAKER IPA NO. 5

IPA No. 5 is brewed with roasted chestnuts, roasted lentils, and Belgian-style candi sugar. Crystal and Santiam hops are used during the boil and for dry-hopping. Crystal hops bring the classic Northwest IPA pine and citrus notes while Santiam adds hints of tropical and stone fruits. Available in a can.
