The 2016 Blueberry project is a blend of sour wheat and blond ales that were aged in white wine barrels for up to 12 months with more than 8,000 pounds of fresh blueberries. The 2016 growing season delivered fruit with elegant blueberry aromatics, providing clean fruit expression to this blend, complemented by the dry, cereal grain notes of the beer with hints of lemon, violets, a soft oak presence and lively acidity. 8.5% ABV

VINTAGE 2011 BOURBONIC PLAGUE $48

This NW style sour ale is a blend of spiced double porters that were aged up to 18 months in Heaven Hill Bourbon barrels before aging on dates and spices for up to an additional 12 months. Complex aromas of dark malts and spices combine with sweet vanillin and notes of Bourbon. Rich Bourbon, vanillin and dark fruits with notes of dates, oak, leather and tobacco dance on the palate. Tart dark fruits and a warming Bourbon flavor finish this off as only Bourbonic can. A special limited re-release! Limit one bottle per person. 12% ABV

This NW style sour ale is a blend of red ales aged for up to two years in oak barrels on elderberries and spices. Aromas of sharp, dark port, raisins, black currants and hints of red peppercorns are the first to be noticed. Tart, dark fruit, blackberries, currants, tobacco and hints of leather on the palate lead to a slightly drying finish of sweet elderberries, dark grapes, aged port and leather. 8.2% ABV

Sang du Chene, meaning blood of the oak, showcases sour strong blond and triple ales aged in three large format oak casks: foudres, puncheons and hogsheads. Oak influences are the highlight of the Sang du Chene, providing flavors of toasted sugars, vanilla and spice complemented by the bright acidity and fruity character of the beer. 9.6% ABV

Highlighting the depth and complexity of our base red ale without the influence of additional fruits or spices, Sang Rouge serves as the foundation of our “Sang” series. A collaboration project made with Mikkeller, Bean-to-Barrel Triple features a blend of barrel and foudre aged sour triple ales with toasted Oregon and French oak and a late infusion of cocoa nibs sourced from Bean Geeks Craft Chocolate in Copenhagen. Celebrating Bean Geeks’ “bean-to-bar” chocolate-making methods, Bean-to-Barrel Triple offers aromas of dark chocolate, vanilla and toasted oak sugars combined with the light pear and citrus fruit notes of the sour triple. 9.4% ABV

BOURBONIC PLAGUE 2017 $14

Bourbonic Plague features sour imperial porters aged in Bourbon and wine barrels for up to two years with additions of dates, vanilla beans, orange peel and cinnamon. This contagiously complex and incurably enigmatic blend continues to represent the pinnacle of our craft at Cascade Brewing. 11.1%

BRUNCH LINE 2017 $12

Brunch lines are as much an institution as brunch itself in Portland, so we made a beer dedicated to the rain-soaked hordes of brunch-goers who patiently stand in line for their weekend fare. Inspired by the mimosa cocktail, Brunch Line features sour wheat and blond ales aged in white wine barrels for up to two years with Willamette Valley-grown Chardonnay grapes, then infused with fresh orange zest. 9.6% ABV

CHÊNE DES FOUS 2018 $12

Made in collaboration with our friends at Burial Beer Company in Asheville, NC, Chêne des Fous (shen de-FOO), meaning “Oak of the Fools,” is a blend of sour triple ales aged for up to 18 months in French oak barrels with dried sumac, fresh apricots and toasted American oak chains. Intense oak flavors are met with savory lemon and dried fruit notes from the sumac and a subtle stone fruit aroma. 8.4% ABV

Citrus Noyaux 2019 $12

Citrus Noyaux consists of sour blond ale aged in oak wine barrels for up to two years with fresh orange, grapefruit and lemon peels and apricot noyaux (noy-OH). We extract noyaux kernels from the pits of locally sourced apricots by hand and add them to the beer, imparting notes of almond and maraschino cherry that are complemented by the juicy fruit flavors of the citrus peel. 8.4% ABV

COASTAL GOSE 2018 $12

Few places embody the wild spirit of the Pacific Northwest like the Oregon Coast. To help protect this venerated landscape, we’ve partnered with the Portland Chapter of the Surfrider Foundation on our Coastal Gose blend. This interpretation of the historic Gose beer features sour wheat ales aged in oak barrels with ground coriander seed and sea salt harvested from Oregon’s coastal waters. By donating a portion of the profits from each bottle sold, we are committed to helping the Portland Surfrider Chapter protect and preserve the world’s oceans, waves and beaches––one beer at a time. 7.3% ABV

CORAL HORIZON 2018 $12

A blend of sour blond ales aged in oak wine barrels for up to 16 months with late infusions of grapefruit zest, hibiscus tea and freshly chopped ginger root. Pouring a brilliant coral-red hue reminiscent of a summer sunset, this small batch blend offers a soft, approachable acidity level with aromas of ruby red grapefruit and a refreshing ginger spice. 8% ABV

CUVÉE DU JONGLEUR $12

Originally released in 2008, Cuvée du Jongleur, or “Blend of the Juggler,” consists of select red, triple and quad sour ales aged in oak barrels for up to three years. Making its first appearance in over a decade, the 2017 project pays homage to the original blend, juggling a variety of base beers that offer clean and complex flavors through the lactic fermentation process that has come to define our Northwest Sour Ales. 9.4% ABV

HARVEST GRAFF 2018 $12

To celebrate the harvest season, we are excited to offer our
interpretation of “graff,” a relatively obscure beer-cider hyrbrid.
Harvest Graff is a blend of sour blond and red ales aged in wine
and bourbon barrels for up to two years, then naturally fermented
with raw juice from Northwest-grown apples and lightly infused
with a blend of spices. 8.8% ABV

A collaboration with our friends at Far Yeast Brewing in Yamanashi, Japan, this unique project is a sour beer interpretation of Far Yeast’s award-winning Kagua Rouge. Featuring a blend of red ales aged in red wine barrels with Japanese sansho pepper and yuzu peel, Kagua Sour offers complex notes of fresh citrus, spicy green peppercorn and roasted red malt. 7.6% ABV

Mayan Bourbonic 2017 - NEW! $14

A variation of our Bourbonic Plague blend, Mayan Bourbonic features sour imperial porter aged in Bourbon and wine barrels with dates for up to two years, then infused with Peruvian cocoa powder, Ceylon cinnamon and cayenne pepper. Inspired by the traditional drink of the ancient Mayan civilization, Mayan Bourbonic delivers notes of bitter chocolate, Bourbon and cinnamon with a mild cayenne spice and delicate carbonation level. 11.3%

Nectarine Dream 2019 NEW! $12

Nectarine Dream is a blend of sour blond ales aged in oak barrels and foudres for up to 18 months, then naturally fermented with fresh, Northwest-grown nectarines and aged on the fruit for an additional five months. We hand process each piece of fruit to ensure full ripeness before adding it to the tank and employing traditional wine making techniques that help capture the purest expression of the nectarine as well as the time and place in which it was grown.

ONE WAY OR ANOTHER 2017 $12

Based on a collaboration recipe originally designed with our friends at Bruery Terreux®, the 2017 One Way Or Another combines whole, Northwest-grown marionberries and Meyer lemon zest with sour blond ale aged in oak barrels for up to 16 months. The finished blend captures notes of blackberry pastry, fresh citrus and spruce tips with a lively acidity and dry finish. 7.7% ABV

Pear Mary is a blend of sour blond ales aged in oak wine barrels then naturally fermented with juice from Northwest-grown pears and infused with fresh rosemary. Aged for up to 18 months, this refreshing herbal beer offers notes of fresh pear, pine and ginger with a balanced acidity, soft fruit sweetness and champagne-like effervescence. 7.1% ABV

PRIMORDIAL NOIR 2017 $14

Primordial Noir is a blend of imperial red ales aged in bourbon and wine barrels for up to two years with Northwest-grown Bing cherries and spices. A concentrated precursor to our Sang Noir project, Primordial Noir features a more robust bourbon and cherry presence with notes of roast malt, molasses and baking spices. 10.5% ABV

Celebrating Portland’s reputation as the City of Roses, we are pleased to offer Rose City Sour, a blend of wheat and blond ales aged in oak wine barrels for up to 14 months with rose petals, rose hips and hibiscus flowers. Rose City Sour captures the delicate floral aromas of fresh roses matched with notes of dried cranberries, pomegranates and a hint of white pepper. 8% ABV

SANG DU CHÊNE 2017 $12

Sang du Chêne, meaning “blood of the oak,” showcases sour blond and triple ales aged in three distinct oak vessels: toasted French and American oak puncheons, Cognac brandy hogsheads and aged wine foudres. Oak influences are the highlight, providing flavors of toasted sugars, vanillin and spice that are complemented by the bright acidity and fruity character of the base beers. VALLEY FLORA 2017 $14

Celebrating Northwest regional offerings of craft beer and wine, Valley Flora combines our sour red ale with Willamette Valley-grown Pinot Noir grapes using traditional brewing and winemaking techniques. Through native fruit fermentation and extended oak maturation, Valley Flora expresses notes of dark bramble fruit, plum, cherry, earth and oak supported by a balanced tannic structure and lively acidity. 10% ABV

Behold the return of Vlad the Imp Aler, one of the most iconic projects in our 20-year history of brewing and blending sour beer.
