Sang Royal is a blend of sour red ales that were aged in red wine barrels for up to 30 months with Cabernet Sauvignon grapes. We start by hand selecting oak barrels with the greatest concentration of red wine character in which to age our red and double red ales. After undergoing lactic fermentation for several months, a portions of these reds are then combined with freshly harvested Cabernet Sauvignon grapes from the Pacific Northwest to be fermented by the natural yeasts and bacteria on the fruit.

Bruery Terreux : One Way or Another - 8 oz $8, 4 oz $6

Iconic bottles, distinctive flavors and outright admiration for each other. One way or another, we were going to brew a beer with our friends at Cascade Brewing. Together, we developed a new sour tripel recipe that we would brew at our separate facilities with each other – one here in Orange County, CA and the other in Portland, Oregon. The collaborative concept called for treating our creations with the same regional ingredients: Meyer lemons from California and marionberries from Oregon. Both brews would be destined to mature for over a year in oak under our respective roofs. At Bruery Terreux, we utilized a mix of New American Oak puncheons, fresh bourbon barrels, port barrels and oak wine barrels to create the ideal blend of flavors, and we couldn’t be more pleased with the complex, tangy tripel that emerged. Try it side by side with Cascade’s release to see how a single recipe can be interpreted One Way or Another. 9.3% ABV

My Grandpa Clyde was born in 1921, on the farm where he would live his entire 92 years. Clyde’s Dry cider is my tribute to his life and his love of the farm. It is a blend of more than a dozen varietals, including sweets and sharps grown on the family farm and loved by Grandpa, farming until his very last days. It draws its tannic character from the blend and the addition of some locally-picked Manchurian Crab apples. 6.9% ABV

Cooper's Hall Rose - 6 oz $9

A great example of a wine made in the vineyard instead of the winery. Our winemaker, Phil Kramer, tended these vines differently than the Pinot Noir he used for his red wine. This is a thoughtful, beautiful glass of rosé with balanced acidity; currently showing off some bold minerality. All vines are Pommard clone, 35 years old, own rooted, dry farmed and hand harvested. 13.9% ABV

Cooper's Hall Pinot Gris - 6 oz $9

Notes of citrus blossom and wild honey make this a pretty expression of one of Oregon’s most beloved grapes. With fruit sourced from Silver Falls Vineyard, a small grower in the Cascade Foothills near our Estate vineyard, this wine shows a side of Pinot Gris with a bit of extra depth. 13.2% ABV
